500g (1lb) potatoes
Wash the potatoes, without peeling, and boil in plenty of salted water. Once cooked, drain, peel, chop the potatoes into evenly sized cubes.
Fry the potatoes in very hot oil until they begin to brown. Then remove and place on a platter.
Meanwhile, chop the tomatoes and fry in a small pan with two tablespoons of olive oil.
Strain this sauce through a sieve and mix with a teaspoonful of Tabasco to taste. Spoon the sauce over the potatoes.
Can be served hot or cold.
