BATTERED CALF FRIES
500 g (1 lb) calf fries (testicles)
Clean the fries with plenty of cold water to get rid of the blood. Remove and discard the surrounding skin, drizzle with lemon juice and leave to stand for an hour.
Place in a metal sieve or colander and scald in a pan of boiling water for half a minute then remove and dry. Slice the fries into fillets and season with salt and pepper. Coat the fries in flour then dip in egg and finally roll in breadcrumbs.
Fry in hot oil until they brown. Serve straight away.
