150g (5oz) cured ham (jamon serrano)
150g (5oz) creamy cheese
Wash the aubergines and without peeling, chop length ways into thick slices. Sprinkle with salt and leave for half an hour to sweat. Dry with a cloth and fry on both sides with a little olive oil until tender.
Lay the slices on an oven tray, placing a little tomato sauce, a slice of ham and another slice of cheese on top. Sprinkle with oregano and grill until the cheese melts.Serve piping hot.
